Putting my Rocky Mountain inspired rectangles away until February, I eventually knitted up the remaining pieces and ironed the whole thing out before I framed the simple square and placed it on my beige wall. Perhaps I needed the chill of winter to remind me of the brisk breeze of that famous mountain range, maybe I briefly tired of sweater and cardigan projects, captivated instead by the simplicity of knit-purl in straight lines.
Estes Park is home to the headquarters of the Rocky Mountain National Park, and for many visitors, it’s the first stop en route to a Rocky Mountain vacation. For dinner, award-winning Trecento Quindici simply can't be beat. Food is mouthwatering and service is impressive; you can even expect a "crumber" to keep the crumbs from building up on the white tablecloths. The food here is exquisite. It's contemporary, handmade Italian (can you say "Lady and the Tramp?"). Dine in tall, dramatic chairs and feel like royalty.

The Experience: If Aspen isn't quite your mountain town scene, head to Vail instead. It's equally as idyllic (it was modeled after European mountain resorts), pedestrian-friendly, and lovely, but the town itself is more of a square in a village with a small collection of boutiques and restaurants for visitors. Ride up and down the gondolas for mountain views in every direction and ski the unique back bowls. It's also closer to Denver, making it easier to get to and, therefore, a little more crowded during peak seasons.
Telluride offers the quintessential Colorado mountain town experience. Not only are its streets lined with grand Victorian buildings, but it has become a hub for adventurers, athletes, and artists of all types, nestled in an isolated box canyon, far from the chaos of modern life. While there’s no skiing this time of year, visitors can still take a ride on the gondola up the mountain to get a bird’s eye view of the town and the breathtaking surrounding landscape. There’s also the opportunity to hike to the state’s longest free-falling waterfall, Bridal Veil Falls, enjoy fantastic fishing, golfing and biking. This little town is big when it comes to festivals too, with the annual Bluegrass Festival bringing a multitude of bluegrass bands to the area to enjoy the sun and the tunes in the outdoor amphitheater.

During the winter most of Trail Ridge Road is closed due to heavy snow, limiting motorized access to the edges of the park.[68] Winter activities include snowshoeing and cross-country skiing which are possible from either the Estes Park or Grand Lake entrances. On the east side near Estes Park, skiing and snowshoeing trails are available off Bear Lake Road, such as the Bear Lake, Bierstadt Lake, and Sprague Lake trails and at Hidden Valley. Slopes for sledding are also available at Hidden Valley. The west side of the park near Grand Lake also has viable snowshoeing trails.[68][88] Backcountry skiing and snowboarding can be enjoyed after climbing up one of the higher slopes, especially late in the snow season after avalanche danger has subsided[89], and technical climbing remains also a possibility, although typically differing in style from the summer months[90].
While my grandkids were great company, my only regret about staying at the family friendly and romantic Austria Haus Hotel is that my husband wasn’t with me.  Located in Colorado’s Rockies at the base of Vail Mountain, this  25-room boutique property gives guests just a taste of Europe with its Bavarian-style architecture and pedestrian-only cobbled walkway at its entrance.

The park is home to some 2,000 to 3,000 elk in summer, and between 800 and 1,000 elk spend the winter within its boundaries. Because of lack of predation, the National Park Service culls around 50 elk each winter. Overgrazing by elk has become a major problem in the park's riparian areas, so much so that the NPS fences them out of many critical wetland habitats to let willows and aspens grow. The program seems to be working, as the deciduous wetland plants thrive within the fencing. Many people think the elk herd is too large, but are reluctant to reintroduce predators because of its proximity to large human populations and ranches.[76]

An excellent vacation destination for visitors who are ready to hit the slopes, winter enthusiasts flock to Telluride every year for its 1,700 skiable acres that cater to both experts and novices alike. Visitors flock to Town Park on the southeast edge of town for its abundance of activities available, such as swimming pools, tennis courts, fishing ponds and campgrounds that are popular for the city’s annual festivals and events. Bear Creek Falls and Bridal Veil Falls offer a variety of scenic hiking trails, while the Telluride Historical Museum and Historic Sheridan Opera House are two cultural attractions that shouldn’t be overlooked.

Here you can go on an art walk, attend a current event or festival, and learn all about Greeley’s history at the Centennial Village Museum. Pikes Peak – “America’s Mountain” is one of the most iconic and beautiful vacation destinations in the West. Rising over 14,000 (making it one of Colorado’s many 14-er’s) feet, Pikes Peak has inspired Americans, including Katharine Lee Bates – who wrote “America the Beautiful” after summiting, for generations. There are a number of ways to enjoy it on your Colorado vacation, including by bicycle (ask us about our exciting mountain biking / rafting packages!) Or ride the historic Cog Railway to the top, where a new visitor’s center is being planned. Our tip: try the donuts – they’re amazing!

Try Himalayan Curry & Kebob, which offers authentic Indian food, or Nepal's Cafe for Nepalese food.
