Colorado has no shortage of amazing restaurants to inspire warm feelings. You might opt for the latest offering from a local celebrity chef, such as Alex Seidel, of Fruition and Mercantile in Denver, who was voted one of Food and Wine’s best new chefs in 2010; or Jennifer Jasinski of Euclid Hall Bar & Kitchen, who impressed judges in season 5 of "Top Chef Masters" and also won the James Beard Award for Best Chef Southwest in 2013. Later in June is the Scandinavian Midsummer Festival, Estes Park's annual celebration of Scandinavian culture. This festival features many Scandinavian and Nordic traditions, such as raising the Maypole, as well as authentic food and drink from the region. There is also dancing, knitting, arts & crafts, and even a reenactment of a Viking camp complete with a Viking ship and sword fight!
Known as a world-class ski destination, Aspen is beautiful year around and offers activities and attractions for all ages. Skiers can challenge their skills on the magnificent steeps, slopes and glades of Aspen Mountain or Ajax, on rugged Aspen Highlands or enormous Snowmass. Take a 14 minute ride with the Silver Queen Gondola to the top of Ajax Mountain for the spectacular views of the mountain peaks, the city below and tall evergreens all around you. At 265,000 acres, Rocky Mountain National Park isn't the country's largest national park, nor is it the most-frequented with about 4 million annual visitors (compared to Great Smoky Mountains National Park's more than 11 million visitors). But there is something definitively magical about RMNP, which rises 12,183 feet into the Colorado sky. The main attraction is hiking its 350-some miles of trails that wind through pine and spruce forests, glittering alpine lakes, swaths of wildflowers and if you're lucky, some elk or bighorn sheep. And maybe it's the thinner atmosphere that goes to visitors' heads, but even the most jaded report feelings of awe and wonder after a day or two of breathing in that refreshing mountain air.

During the winter most of Trail Ridge Road is closed due to heavy snow, limiting motorized access to the edges of the park.[68] Winter activities include snowshoeing and cross-country skiing which are possible from either the Estes Park or Grand Lake entrances. On the east side near Estes Park, skiing and snowshoeing trails are available off Bear Lake Road, such as the Bear Lake, Bierstadt Lake, and Sprague Lake trails and at Hidden Valley. Slopes for sledding are also available at Hidden Valley. The west side of the park near Grand Lake also has viable snowshoeing trails.[68][88] Backcountry skiing and snowboarding can be enjoyed after climbing up one of the higher slopes, especially late in the snow season after avalanche danger has subsided[89], and technical climbing remains also a possibility, although typically differing in style from the summer months[90].

To reach Rocky Mountain National Park, many travelers fly into Denver International Airport (DEN) and either rent a car and drive the 80-some miles northwest to Estes Park or take the Estes Park Shuttle, which runs frequent routes from the airport to Estes Park for $45 one-way and $85 round-trip. There is no public transportation available between the airport and the park.
In the winter, Steamboat Springs is famous for its champagne powder; in the summertime the Yampa River Valley, Steamboat Lake and Zirkel Wilderness Area become a veritable outdoor wonderland with boat rentals, canoeing, kayaking, fishing, SUP, swimming and camping. The Coca Cola Adventure Zone at the base of Steamboat Ski Resort includes ropes course, slingshot bungee jump, climbing wall, mini-bounce, mechanical bull, human gyro and t-shirt spin art. Bring your bikes and wind along the paved four-mile Yampa River Core Trail that follows the Yampa River. Or better yet, grab a tube and cruise down the only free-flowing river in the state, meaning that nowhere along its 261 miles is it obstructed by dams or diversions (a bonus for those float trips). If you want to warm up (really hot), checkout the natural hot mineral springs at Old Town Hot Springs and Strawberry Park Natural Hot Springs. A not-to-be missed event is Steamboat Springs Pro Rodeo where contestants gather once a week to compete. Once upon a time, my daughter won the Ram Scramble and still raves about it. The sun made us lazy, and after following Brian as he made his way upstream I found a wider expanse of sand and gravel, promptly plopping down on a pair of flip flops I had brought in my backpack as a make-shift seat. After identifying the northern harrier hawk over my head, and the savannas sparrows and red-winged blackbirds perched precariously on reeds across the water, I took out my knitting project. I didn’t have to worry about losing Brian; in the valley I could see for miles in both directions.
