Although there are a limited number of dining establishments inside Rocky Mountain National Park, nearby Estes Park offers 70-some restaurants, which serve up a range of cuisines. You'll find a handful of fine dining establishments, including the traveler-favorite Twin Owls Steakhouse, but most of its restaurants are casual yet tasty spots. To refuel after a long day on park trails, travelers should head to Elkhorn Avenue in Estes Park for just about any kind of cuisine. For instance, Antonio's Real New York Pizza & Deli is a great spot to dine in or takeout, Nepal's Café is a prime place to fill up on Indian-Nepalese dishes, while Peppers Mexican Grill is beloved for its buffalo nachos.

Rising from 7,800 feet to 12,000 – even 14,000 feet in some places – RMNP is a high-elevation park and if you don't give yourself time to adjust to the thinner atmosphere and lower oxygen levels, you could run the risk of getting the headaches, nausea and disorientation characteristic of altitude sickness. Along with taking a day or so to acclimate to the high altitude, you should make sure to consume plenty of water and food to ward off symptoms.

Located just a few miles to the northwest of Denver, Boulder is a college town nestled against the foothills of the Rocky Mountains. Boulder’s inhabitants are best known for their healthy lifestyles, and outdoor activities are plentiful in and around the city. Boulder Creek cuts straight through the town and is lined with walking and biking trails. The four-block pedestrian-friendly Pearl Street Mall features outdoor performers in all but the most inclement weather. Later in June is the Scandinavian Midsummer Festival, Estes Park's annual celebration of Scandinavian culture. This festival features many Scandinavian and Nordic traditions, such as raising the Maypole, as well as authentic food and drink from the region. There is also dancing, knitting, arts & crafts, and even a reenactment of a Viking camp complete with a Viking ship and sword fight!
Crested Butte - this relaxing destination in Northern CO remains one of the state's premier outdoor playgrounds. The Experience: If Aspen isn't quite your mountain town scene, head to Vail instead. Ride up and down the gondolas for mountain views in every direction and ski the unique back bowls. Brown’s Canyon National Monument – It’s one of Colorado’s newest national monuments, and also one of it’s most beautiful. A pristine, natural canyon, Brown’s Canyon offers visitors the opportunity to hike, raft, or camp in the headwaters of the Arkansas River. Towering ponderosa pine trees and monolithic boulders greet you along this amazing stretch of white water. We may be biased, but we think the best way to see it is by raft. There is also fantastic camping along the river at various locations. Browns’ Canyon is also close to the small town of Nathrop, which offers a number of hot-springs resorts that are perfect for relaxing after a day of adventuring, including Antero Hot Springs Cabins, Mt. Princeton Hot Springs Resort, and Cottonwood Hot Springs.

Another addition to the Denver skyline is the 165-room ART Hotel, which opened early summer of 2015. Located in downtown Denver’s Cultural District, the boutique hotel is simply unique, capturing the contemporary art scene as if the hotel were its sketching pad. When my husband and I stayed there, one of our favorite things to do order a cocktail at the rooftop bar and then step out onto the FIRE Terrace, a unique Denver rooftop bar and restaurant experience with a fourth-floor patio that overlooks the bustling life of the Broadway Street below.
Offering visitors a glimpse into Colorado’s rich history, Georgetown is a charming Victorian mining town nestled just west of Denver. Once the third-largest city in the state, Georgetown was built in 1884 to service the silver mines. Visitors can take a ride on the famous Georgetown Loop Railroad to Silver Plume and back, or visit the well-preserved Hotel de Paris to browse artifacts from the era. Learn how the wealthy locals used to live at the Hamill House Museum or simply browse the charming streets lined with Victorian-era homes and shops. Those who want to explore the area by car should drive along the Guanella Pass, a long stretch of road with picturesque views, before taking rest in one of the area’s many Victorian bed and breakfast inns.
