The Signature Jill's Restaurant has an outdoor terrace with mountain views and serves contemporary American & French cuisine with organic ingredients. The famous hot springs of Glenwood is a must-see and do for all romantics. Located in Glenwood Springs, less than 3 hours from Denver, the historic and local family-owned Hotel Denver spans more than 100 years with many stories to tell, including Colorado immigrants, prohibition, gangsters, world wars, and even a Wild West shooting or two. This Colorado hotel has bragging rights to prime real estate in historic downtown Glenwood Springs, close to the train, many restaurants, shopping, the Hot Springs Pool, and our personal favorite, the Iron Mountain Hot Springs.
Another addition to the Denver skyline is the 165-room ART Hotel, which opened early summer of 2015. Located in downtown Denver’s Cultural District, the boutique hotel is simply unique, capturing the contemporary art scene as if the hotel were its sketching pad. When my husband and I stayed there, one of our favorite things to do order a cocktail at the rooftop bar and then step out onto the FIRE Terrace, a unique Denver rooftop bar and restaurant experience with a fourth-floor patio that overlooks the bustling life of the Broadway Street below.
A classic Colorado city just up the road from Denver, Fort Collins is a great spot for a weekend trip in Colorado. The historic college town is artsy and vibrant with plenty to do. The Experience: If Aspen isn't quite your mountain town scene, head to Vail instead. It's equally as idyllic (it was modeled after European mountain resorts), pedestrian-friendly, and lovely, but the town itself is more of a square in a village with a small collection of boutiques and restaurants for visitors. Ride up and down the gondolas for mountain views in every direction and ski the unique back bowls. It's also closer to Denver, making it easier to get to and, therefore, a little more crowded during peak seasons.

While it is possible to travel through Rocky Mountain National Park and not catch sight of any wildlife, we venture to say that is an unlikely experience. From everyday sightings of chipmunks and mule deer to the moving experience of viewing elk in rut (the mating season), the animals in the park let you know that you are part of something truly wild. Estes Park is always a wonderful escape for anyone looking to get out of Denver for a day or two. There is a lot to do and see here, with plenty of wonderful restaurants, entertainment and shopping. Plus, off-season the rates are very affordable, and you’ll find the town less crowded and easier to explore. Stay at the Fall River Cabins, just two miles east of Rocky Mountain National Park. You’ll find the cozy, country-style wood cabins to be very romantic, with spa hot tubs and fireplaces in each unit. Everything has that rustic, woodsy feel, which adds to the mountain escape that you will enjoy all weekend long.
The sun made us lazy, and after following Brian as he made his way upstream I found a wider expanse of sand and gravel, promptly plopping down on a pair of flip flops I had brought in my backpack as a make-shift seat. After identifying the northern harrier hawk over my head, and the savannas sparrows and red-winged blackbirds perched precariously on reeds across the water, I took out my knitting project. I didn’t have to worry about losing Brian; in the valley I could see for miles in both directions.
