Colorado has no shortage of amazing restaurants to inspire warm feelings. You might opt for the latest offering from a local celebrity chef, such as Alex Seidel, of Fruition and Mercantile in Denver, who was voted one of Food and Wine’s best new chefs in 2010; or Jennifer Jasinski of Euclid Hall Bar & Kitchen, who impressed judges in season 5 of "Top Chef Masters" and also won the James Beard Award for Best Chef Southwest in 2013. Or, you might choose a destination restaurant like Ragnar’s in Steamboat Springs, where getting there is half the fun — guests can arrive only via skis, snowboards or snowshoes.
Other interesting summer activities include guided tours of Chimney Rock National Monument, hot air balloon adventures and paddling, tubing or rafting along the San Juan River. In winter you can go dog-sledding, cross-country skiing, snow tubing and more at the Wolf Creek Ski Area, enjoy some brewery-hopping or simply relax in the natural Pagosa Hot Springs. Its stylish architecture makes the restaurant one of the most beautiful in Colorado. You can enjoy spectacular views of the city skyline from the restaurant while feasting on a romantic dinner with your love. The restaurant serves high quality seafood, steak,s and legendary wines. Hands down, Crested Butte is my favorite summer destination in Colorado. In addition to world-famous mountain biking and hiking (the views from Snodgrass Mountain are second-to-none), don’t miss the four-week long Crested Butte Music Festival (with the free Divine Family Young People’s Concert July 13, 20 and Aug. 3) and the Wildflower Festival (July 8-14, 2013) where you’ll swear you climbed onto a Monet canvas of mad, extravagant colors. Last winter, CBMR purchased the Coke Zero Gravity BagJump; a 50 feet by 50 feet bag of air for guests to tube and ski and ride into. Come summer, the resort will be setting up two levels of scaffolding at 10 feet and 20 feet for kids and adults alike to jump into the cloud-like bag of air. The resort will also be building a dirt jump for biking enthusiasts to practice their jumping skills with their bicycles for an added adrenaline rush, as if the 25 miles of trails in the Evolution Bike Park isn’t enough. For younger kids, check-out the Trailhead Children’s Museum and big kids (must weigh at least 70 pounds) can try the Crested Butte Zipline Tour, which includes five zip lines ranging in length from 120 – 400 feet connected by features or “events” such as suspended wood bridges and towering platforms. P.S. A few years ago, my kids did Kids Nature Camp at world-renown Rocky Mountain Biological Laboratory in nearby Gothic, Colo. and still rave about it. 
Located just a few miles to the northwest of Denver, Boulder is a college town nestled against the foothills of the Rocky Mountains. Boulder’s inhabitants are best known for their healthy lifestyles, and outdoor activities are plentiful in and around the city. Boulder Creek cuts straight through the town and is lined with walking and biking trails. The four-block pedestrian-friendly Pearl Street Mall features outdoor performers in all but the most inclement weather. A drive up Baseline Road on Flagstaff Mountains rewards visitors with spectacular views, and there are picnic areas and hiking trails to enjoy at the summit as well.
Perched on the western edge of the Rocky Mountain National Park, Grand Lake is the perfect weekend destination for outdoor enthusiasts and families traveling with kids. Providing easy access to hiking, Grand Lake is home to wildlife watching and winter activities such skiing and snowshoeing, where visitors are spoiled for choice in how they spend their days. A picturesque marina offers boat rentals and paddle boards, while there are sandy spots that are perfect for beach-related activities. Those who want to explore the area should drive along the scenic Trail Ridge Road and venture into the park to the nearby town of Estes Park on its other side.
While January isn’t typically busy, Murdock said that in December 2017, the park had 112,000 visitors. Visitors have shown up every day since the shutdown began, even though recent snowstorms and unplowed roads have made the park essentially off limits to vehicles. Anyone can still walk in, though, and Murdock has seen proof that that’s happening.
Observing wildlife is one of the most popular activities in the Rockies. A drive through the park at dusk during the summer is sure to guarantee viewing of herds of elk and mule deer. And throughout the rest of the year, moose, bighorn sheep, black bears, coyotes, cougars, eagles, hawks and scores of smaller animals like pikas and marmots delight wildlife-watchers of all ages.
Rocky Mountain National Park, established in 1915, is a living showcase of the grandeur of the Rocky Mountains. Located outside Estes Park, Colorado, Rocky Mountain is a great family vacation destination, offering outdoor experiences for all—from easy nature hikes around crystal clear mountain lakes to daring rock scrambles up waterfalls and mountains.
Apart from elk, many other ungulates reside in the park, including bighorn sheep, moose, and mule deer. Bison were eliminated from the park in the 1800s, as were pronghorn and moose, the latter of which was restored to the area in 1978. Moose are now frequently seen in the park, especially on the park's west side.[77] The park's bighorn sheep population has recovered and is estimated at 350 animals.[78]
Adventure Ridge is the big news at Vail and mid-summer, the resort will implement several new activities, including a four-line 1,200-foot long zip line, two aerial ropes courses, and a kids zip line as well as a kids ropes course, climbing wall, rebound trampoline. Gore Creek Mini Golf offers family-friendly putting atop the Lionshead base area for the second summer season. Grab your family and try the FREE bean bag toss, horseshoes or the new slackline park where kids of all ages can test their balance at a variety of levels. If your kids are age four and older, they can use digging tools and a map to uncover dinosaur bones and learn about prehistoric creatures. The FREE Bud Light Hot Summer Nights Concert Series on Tuesdays June 12-August 21 has become the social event of the season. If you have aspiring adventurers, the 4th annual KEEN Vail Kids Adventure Race on August 10 and 11 lets kids ages 6 through 14 experience the thrill of adventure racing with mountain biking, hiking, tubing, archery, a low ropes course, a zip line, a climbing wall, a Tarzan swing, a giant slip-n-slide and more.
Couples can share snowy adventures together, try out new activities, or split up and go different directions during the day. Meals with other engaging guests liven the conversation, and the dining room is always filled with laughter. Leisurely afternoon naps or late night soak in the hot tub give couples a chance to retreat from it all and focus on each other.
The Experience: Denver is the perfect urban adventure for anyone who likes midsize cities. It's easy to navigate and manage and doesn't feel at all claustrophobic, but offers endless cultural excursions, gourmet dining experiences, and a fun nightlife you'd expect from large cities. Make sure you visit the Denver Art Museum, check out the breweries in the RiNo neighborhood, and stay at the Crawford Hotel, which is in the old Denver Union Station.
