If it’s true that the couple that cooks together stays together, then Uncorked in Centennial is saving relationships by the class-full. That was not my intention. We planned a trip from Florida to the Rocky Mountains of Colorado for one of my freelance writing projects, and originally scheduled a day in Denver (at 5,280 feet in elevation) to acclimate. Frontier Airlines had a different idea. I heard alternatively that our plane had a mechanical issue, that weather in the Midwest grounded the flight, and that the crew went on strike. Regardless, the airline cancelled our original flight.
Bear Lake is a high-elevation lake in a spruce and fir forest at the base of Hallett Peak and Flattop Mountain.[44] Bierstadt Lake sits atop a lateral moraine named Bierstadt Moraine, and drains into Mill Creek. There are several trails that lead to Bierstadt Lake through groves of aspens and lodgepole pines.[45] North of Bierstadt Moraine is Hollowell Park, a large and marshy meadow along Mill Creek. The Hollowell Park trail runs along Steep Mountain's south side. Ranches, lumber and sawmill enterprises operated in Hollowell Park into the early 1900s.[45]
Dinosaur National Monument, in northwest Colorado, combines dramatic scenery with natural and cultural history to create one of Colorado's most interesting sites. Dinosaur remains embedded in exposed rock walls reveal evidence of the giants that once roamed these areas. Petroglyphs offer insight into the cultures and people that lived here long ago, and surrounding it all are cliff walls and the Green and Yampa Rivers snaking through the otherwise dry landscape.
Known as a world-class ski destination, Aspen is beautiful year around and offers activities and attractions for all ages. Skiers can challenge their skills on the magnificent steeps, slopes and glades of Aspen Mountain or Ajax, on rugged Aspen Highlands or enormous Snowmass. The sun made us lazy, and after following Brian as he made his way upstream I found a wider expanse of sand and gravel, promptly plopping down on a pair of flip flops I had brought in my backpack as a make-shift seat. After identifying the northern harrier hawk over my head, and the savannas sparrows and red-winged blackbirds perched precariously on reeds across the water, I took out my knitting project. I didn’t have to worry about losing Brian; in the valley I could see for miles in both directions.
Located around 65 miles (105 km) west of Denver, Breckenridge is a historic mining town with a small population that increases tenfold during skiing season. There are more than 2,300 skiable acres on the four mountain peaks that make up Breckenridge’s southwestern border. A newly opened gondola in the north side of town takes skiers up to the summit of the nearly 13,000-foot (4,000 meter) high Peak 8, Breckenridge’s original ski mountain. With more than 250 buildings listed on the National Historic Register, cultural attractions in gold-rush town are worth exploring as well.
Region 5, known for waterfalls and backcountry, is south of Estes Park and contains Longs Peak—the park's iconic fourteener—and the Wild Basin area.[35] Other peaks and passes include Lily Mountain, Estes Cone, Twin Sisters, Boulder-Grand Pass, and Granite Pass.[47] Eugenia Mine operated about the late-19th to early-20th century, with some old equipment and a log cabin remaining.[47] Sites and trails include Boulder Field, Wild Basin Trail, and Homer Rouse Memorial Trail.[47]

“This isn’t a furlough for us,” Oropeza said. “There are definitely folks who, if this continues into next week, they’ll have to forfeit their commitment. Some are exploring applying for other jobs. They have student loans, they have car payments and other bills. …There are ripple effects this is having down the road. Our seasonal contracts, we have to have our contracts for summer seasonal work signed soon. All these things are getting backlogged.”

Beaver Mountain Loop, also used by horseback riders, passes through forests and meadows, crosses Beaver Brook and several aspen-filled drainages, and has a great view of Longs Peak.[42] Deer Mountain Trail gives a 360 degree view of eastern part of the park. The summit plateau of Deer Mountain offers expansive views of the Continental Divide. During the winter, the lower trail generally has little snow, though packed and drifted snow are to be expected on the switchbacks. Snow cover on the summit may be three to five feet deep, requiring the use of snowshoes or skis.[42]

A small city that packs a lot of punch for its size, Vail is one of the most beloved ski destinations in the country, where its not uncommon to spot a celebrity or two. Nestled between the Gore Mountain Range and Sawatch Mountain Range, this narrow alley is home to the largest single-mountain resort in the United States. While most visitors come to Vail for its famous 5,289 acres of ski slopes, in the summer visitors can also explore the Eagles Nest Wilderness Area and Holy Cross Wilderness area to hike the area’s rugged mountainside trails.
During the winter most of Trail Ridge Road is closed due to heavy snow, limiting motorized access to the edges of the park.[68] Winter activities include snowshoeing and cross-country skiing which are possible from either the Estes Park or Grand Lake entrances. On the east side near Estes Park, skiing and snowshoeing trails are available off Bear Lake Road, such as the Bear Lake, Bierstadt Lake, and Sprague Lake trails and at Hidden Valley. Slopes for sledding are also available at Hidden Valley. The west side of the park near Grand Lake also has viable snowshoeing trails.[68][88] Backcountry skiing and snowboarding can be enjoyed after climbing up one of the higher slopes, especially late in the snow season after avalanche danger has subsided[89], and technical climbing remains also a possibility, although typically differing in style from the summer months[90].
An excellent weekend destination, Telluride is a beautiful town wedged in a picturesque glacial canyon. Located at the base of the beautiful San Juan Mountains, this former mining area has become a mecca for an array of travelers. From artists to skiers, celebrities and hippies, travelers flock to the area to explore its restored Victorian main street and nearby attractions. A delightful shopping area, visitors can peruse the local history at the Telluride Historical Museum, browse artwork at the Telluride Arts District or indulge in its many outdoor adventures. Bear Creek Falls is a great hiking destination, while visitors can also find an array of family-friendly swimming and fishing spots throughout the area.
Sleep helped the altitude sickness, and after a full night in one of the research site’s cabins, I felt much revived. Brian fished in the morning and I scrambled up a rocky outcropping with a graduate student studying pikas through their poop (a non-invasive way to analyze stress levels of this small mammal that looks like a cross between a rabbit and a mouse): but our afternoon was free. What to do?
The mountain biking trails around Fruita are some of the top-rated trails in the state. Most notably are the 18 Road Trails, with the infamous Zippity Do Da trail, and the Kokopelli Loops. This is desert terrain, with trails that run along the tops of ridges and everywhere in between or alongside cliff ledges with views over the Colorado River. This area has, for many mountain bikers, become an alternative to Moab, Utah. During the spring, you can even combine sports; mountain biking in Fruita one day and skiing at Beaver Creek or Vail - just over two hours away - the next.

Brian eventually caught one small trout in the Moraine creek - success! - and many more in the other rivers that flowed through the park, both that afternoon and the next day. We gazed at fellow monoliths from the top of tundra trails, and spooked a red fox along a riverway. All the time, my small knitting project lay safe and secure in my pack, ready to emerge anytime we sat for more than a few moments.
Buena Vista is an historic mining and railroad town that resoundingly lives up to its Spanish name meaning “good views” – you are surrounded by towering mountain peaks that provide a wonderful year-round playground for adventure seekers. The area boasts some of the best river rafting adventures in the country and you can also go hiking, biking, horseback riding, fishing and zip-lining.
A small mining camp not so long ago, Boulder is a modern, sophisticated town at the base of the Flatirons, popular among extreme sports folks and lovers of magnificent nature of all ages. Stroll through the charming downtown with the popular Pearl Street Mall. Discover Boulder’s past at the Boulder History Museum located in the beautiful historic Harbeck-Bergheim House. The Experience: Super close to Manitou Springs, you'll find another town called Colorado Springs, which is also in the Pikes Peak region. While you're there, you have to see the park known as the Garden of the Gods. As its title implies, it's pretty otherworldly. With incredible, oddly shaped sandstone rock formations, you'll want to spend all day here. You should also pay a visit to the Royal Gorge Bridge, an insanely high, dramatic bridge between the canyons. Then head to the upscale resort Broadmoor.
Garden of the Gods, a registered National Natural Landmark, is a unique landscape of jagged stone towers and fins jutting up 300 feet from the earth, and giant balanced boulders and rock piles dotting the landscape, with distant mountains completing the scene. Fifteen miles of trails, most of which are short and easy, allow you to get up close to the dramatic rock formations and wander through the surreal scenery. The park is a popular area for rock climbing, but other activities in the park include road biking in designated biking lanes, mountain biking, horseback riding, and Jeep and Segway tours.
You can get maps and info at the Estes Park Visitors Center and catch a free shuttle bus to most main attractions. Intrepid adventurers will find an almost endless list of outdoor activities to try, including mountaineering on Longs Peak, thrilling white water rafting, hiking, biking, backpacking, skiing and snowshoeing. We really enjoyed our stay at the Solitude Cabins! We stayed in the Dalton's cabin which had very comfortable and clean accommodations with lots of room. The kitchen was complete with everything we needed. With our stay being in December, we were especially excited to see our cabin so adorably decorated for the Holidays, it was so festive! It totally exceeded our expectations! We will most definitely be back!
